Susie’s apricot cookies

These are not mine, but they are delicious. If they get too done, they’re dry and overly crisp, but they are delicious.

Cream together:
1/4 c shortening
1/4 c butter
1/2 c sugar
1/2 c brown sugar
1 egg

Sift:
1 c flour
1/2 tsp cinnamon
1/2 tsp salt
1/2 tsp soda
1/2 tsp baking powder

Add to creamed mixture.

Stir in
1 c oatmeal
1 c chopped dried apricots
1/2 c walnuts
1 tsp vanilla

Drop by large TBS onto cookie sheet.
Sprinkle with cinnamon sugar.

Bake 15-17 minutes at 325.

(Note: Walgreens has bags of soft dried apricots for $3. You don’t want hard dried apricots. I would think that dried apples would work well too.)
